When Trevor Greenwood learned that the iconic Queen City Grill was slated to close late last year, he sprang into action. Working feverishly, he pulled together a team who shared his love of the restaurant and inked a deal to save the Queen two days before Christmas and just a week before the doors would have closed forever. The newest addition to Macrina’s bread menu is the German Rye loaf. The three keys to baking this loaf are a lengthy scald, a natural rye starter, and making a soaker with stale rye bread, flax seeds and sunflower seeds. This loaf has a sweet, slightly sour, but caramelized flavor. Learn more about this product of the month here!
